Marble Cake
- Heat oven to 180 deg and grease a loaf pan, set aside
- In a large bowl, using electric mixer at low speed, beat sugar and butter until blended. Increase to medium speed and beat until light and fluffy.
- Add vanilla extract, salt, eggs and beat medium speed until well mixed.
- Using spatula or wire whisk - mix in the flour 1/2 cup + 1/4 cup milk at a time until 2 cups + 1 cup milk are fully mix into batter.
- Remove 2 cups batter to a medium bowl. Using wire whisk, beat 1/2 cup cocoa into batter until well blended. As for the remaining of the vanilla batter, using wire whisk, beat in another 3/4 cup of flour.
- Pour in batter in alternate portion into greased loaf pan. Using satay stick or a large spoon, twist through batters to obtain marbled effect.
- Bake for 1 hour using 160 deg. (check your cake if its done by poking with satay stick, stick must come out clean especially the middle part) Every oven cooks differently. Cool cake in pan and on a wire rack for 10 minutes. Remove cake from pan and cool completely.
- Enjoy your marble cake.

Chairo, Daffie and Pinko Bears
Check out my new Hug of Bears this May. Meet Chairo - born on 26th May 2009, tuesday. He is 13" tall, 230 gm. He has jointed head, thus, he can moved his head left and right. His body and limbs are soft and huggable as well. He also has crystal eyes............

Crystals Beads-Bear
Meet MAPLE : weight 370gm, Height 15" born on 17 May 2009, sunday. She has cherry blossom motif on her right body side. I use japanese beads for the stem branches and swarovski bicone beads for the flowers.
Here's BLOSSOM : weight 220 gm, height 12" also born on 17 May 2009, sunday. She has sakura motif cloth on her body, instead I sew the words on her left thigh. This bear is for my niece's 21st birthday this weekend. Hope she likes it. Her right hand has a bracelet with a lock and key hanging on it. See below for closer details.

Cranberry Cake
Today is a school holiday.......my girls are revising their work for the coming exam this week. We intend to stay in and not go out for lunch. With some cranberries left in the bottle, I decided to try this new recipe which I found from the internet. The girls said it is moist and nice compare to the last batch of cranberry cake I made at school.
So, try this one out, you may substitue them with mix dried fruit instead or add abit of nut for that nutty flavour.
I uses a bund pan but felt that the side gives abit of a crisp which my younger girl dislike. So next time I will try a square pan instead and cut the side off. By the way, best to grease the pan first and sprinkle flour on it for easy taking it out.
Here's the ingredients:
- 1-1/2 cups dried cranberries (soak in hot water for 15 minutes)
- 1 cup butter or 250 gm at room temperature
- 3/4 cup granulated white sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1/4 cup orange marmalade
- 1/2 cup sour cream
- 2-1/2 cups all-purpose flour (sift flour)
- 1/2 teaspoon baking powder (sift baking powder together in flour)
Method:
- preheat oven to 180 - 200 deg C and grease a 9 x 5 " loaf pan.
- drain thoroughly and pat dry cranberries on paper towels and set aside
- beat butter + sugar on medium high (electric mixer) till light and fluffy for 3 to 5 minutes.
- Add eggs + vanilla extract + orange marmalade + sour cream - beat low speed until combined.
- using hand whisk, combine together baking powder and flour, add flour mixture to wet ingredients, 1/3 at a time, mixing until blended.
- Fold in cranberries.
- Pour into prepared loaf pan and bake for 35 mins to 1 hour depending on your oven. Use a satay stick to test if the cake is done.
- Cool the cranberry cake to room temperature before cutting to serve.
